When making kit wines be sure to read all the instructions that came with your kit. The manufacturer has done all the experimenting and research to ensure a good, drinkable wine is produced.
If this is your first kit wine then be sure to stick with the instructions.Once you've made a kit or two and done some research then you might be successful at "tweaking" a kit wine to suit your needs. In fact "tweaking" can be fun and rewarding, but be prepared that if you make a mistake your whole batch of wine could be a disaster.
