Laying down wine is a good thing to do. When you lay down wine you're storing it and aging it for future consumption.
The home winemaker can plan a wonderful cellar with many different wines that are at different stages of maturity.
If you want wine for pretty much immediate consumption you'll need to use the 4 week kits. These have less total dissolved solids and shake off the "green" flavours quickly. These kits mature quickly but don't provide the subtle nuances and depth of flavour you'll get in a premium wine kit.
if you have the proper storage space make several kits at once. Make one at least a premium kit. Let this kit age for at least 6 months if possible one year to have it's true flavour come out. You won't be disappointed especially when you compare it to a 4 week kit.
Most home winemakers are impatient, I know I'm one of them. But patience does pay off. I've got a 2 year old Merlot which is showing it's excellent colour and flavour now.
Patience is rewarded in making wine.
